Rule of thumb: any temperature above the prep (80° and more) could damage the effects of Matcha tea. Especially baking - if you make a matcha cookie or brownie or cupcake, its for the great taste, not so much for the health benefits.

Good news: anything cooler than 80°C is fine - tea, home made iceream, sorbets, desserts and much more.
